DAVIDOR F1

Very attractive and productive shallot with better adaptation to intermediate areas than Conservor. Elongated pink tear drop bulbs. In long day areas Davidor will have earlier maturity than Conservor but will not store as well.

MATADOR F1

Vigorous and uniform blocky brown variety with beautiful papery skin. Large, blocky bulbs are easy to process in kitchen and have the traditional flavor and sugar content of shallots.

CONSERVOR F1

The industry standard, Conservor leads in peeling and storage. This elongated French type shallot has a slight teardrop shop, deep pink flesh when peeled, and no skin between doubles. Available as conventional and organic seed.

INNOVATOR F1

The latest slot in Bejo's shallot assortment, this breakthrough variety is a first in Downy Mildew resistance. Innovator has an elongated teardrop shape and rustic pink bulbs. A strong root system means plants may need to be undercut and lifted for proper dry down and storage.

ECHALION

Onion x Shallot cross. Easy to peel, single-centered bulbs have a bright coppery pink outer skin and a pretty rosy-purple interior with thick rings. The sweet tender bulbs have a slight citrusy flavor when eaten raw. When caramelized, things get even better as the natural sugars are enhanced and do not leave any overpowering aftertastes. 

CREME BRULEE F1

Growing similarly to it's onions and shallot heritage, Echalion seed is transplanted into rows or small clusters of 2-3 starts per cell. Creme Brulee is a first of its kind for the US market and boasts a 2021 AAS Winner as a result. The elongated allium is simple to peel revealing beautiful thin pink rings down to a single center.
