LEEKS
While onions are one of the oldest vegetables in the world and garlic is best lauded for a heap of health benefits, leeks are arguably the least discussed allium in the U.S. The pleasure of growing and eating leeks is one which many choose to repeat once they have gotten their first taste. While growing, leeks stand straight as sentinels will fancy tight green-blue fans adorning their stalks. After cooking, bright green grassy flavors meld into caramelized sugars that are at the same time bright and savory.
