FENNEL

Vegetable fennel consists of two parts- the fleshy white edible bulb and the wispy fronds. The bulb tastes of anise, or black licorice, when raw and is excellent with salads containing bitter greens and citrus. When heated the flavor mellows to sweet and bright with just a hint of the raw flavor. The tops should not be left to waste. They make an excellent herby bed for grilled fish or can be sprinkled over soups and stews. Use the stalk trimmings for vegetable stock. Bejo varieties are productive, uniform and have good bolting tolerance. Our assortment has varieties suitable for all day lengths.

VICTORIO F1

Victorio is a short day variety for winter and spring harvest in Southern States (short-day areas).  Plant mid-summer and bulbs mature into autumn. Bulbs are round and bright white, sporting dark green foliage and bolt tolerance. Available as conventional and organic seed.
