Celeriac, sometimes called celery root, is edible from root to leaf and an excellent addition to soups, salads, and even juices. Bejo's breeding focuses on internal color, smoothness, shape, foliage quality, bolting tolerance and shelf life so varieties begin with the best possible traits for quality and yield. Not to mention all varieties in the assortment are highly resistant to Fusarium Yellows.
